Challenge
To determine if reducing ABV from 40% to 37.5% will change the sensory experience of a leading rum brand.
Solution
Descriptive Sensory Profiling of the rums, both solus and a mixed, by one of SAM’s trained panels. The panel defined and rated the intensity of the individual nuances making up the appearance, aroma, flavour, mouthfeel and aftertaste qualities of the rums.
Outcome
The panel measured a flavour change in the neat rum but this was masked in a mixed drink. The client went on to determine the impact on regular consumers and then used the sensory panel findings to communicate the new flavour experience on pack.
